Chicken Cacciatora
This traditional Italian dish means "Chicken Hunters Style" in Italian. In its classic form this dish is prepared with mushrooms, onions, tomatoes, herbs and a little wine. Abundant delicious sauce goes well with pasta and the tender chicken pieces are light and juicy. A nice salad or some Italian bread complements this hearty meal.


Not Your Mother's Meatloaf
This is meatloaf extraordinaire! Lean ground meat and sweet Italian sausage rolled with prosciutto, Havarti cheese and mushrooms. Sliced into pinwheels it is gorgeous to look at with layers of flavor. A nice garlic smashed potato side complements this comfort food-fest!

Soy Marinated Tuna
This is a nice light meal. Grill or broil the tuna steaks that have marinated in a sweet ginger soy sauce. Some delicious Basmati rice pilaf lends a little bulk to this low-cal entree.


Aunt Ev's Hot Chicken Salad
My aunt Evelyn who is in her 80's loved to prepare this for us kids when we visited her. It is really just a jazzed up chicken salad baked with a little crunchy breadcrumb and Parmesan on top.  Despite its simplicity, this is still a crowd pleaser in my house!  A nice green salad and some crusty bread make this a winner 40 years later!

Lamb Curry
For you lovers of lamb out there this is another traditional Indian dish loved for its spiciness.  Lamb is traditional, but other proteins can be substituted. I make my own Garam Masala which is a darker and richer spice mix than what is bought at the store. Served on brown rice this is memorable!

Friday night Pizzas
At our house Friday night is always pizza night no matter what time of year it is. I make my own pizza dough and can add whatever toppings you like. Sausage, pepperoni, veggies, lots of cheese??  I can spice it up or spice it down.  Whatever you desire. These 14" pizzas are made and frozen and then baked when you are ready.  A nice green salad with my home made vinaigrette makes this a no-guilt meal.

Vegetarian Chili
Well I love beans.  They are low in fat, good for you and an inexpensive protein.  So naturally I make a wonderful chili that is loaded with flavor and heat.  Of course I can tone down the heat without compromising the flavor.  I also add some delicious corn bread or cheese-y biscuits to complement this meal. Yum!
